Course 1 – Wagyu Bone Marrow
Roasted Wagyu marrow bones served with crispy Brussels sprouts tossed in mustard, vin cotto & fresh mint.
Course 2 – Wagyu Short Rib
Slow-smoked Wagyu short rib, glazed with Highwayman Whisky, accompanied by anise-charged fennel pickles.
Course 3 – Reverse-Seared Wagyu Rib Eye
Marble Score 6-7 seared to perfection, served with rich demi-glacé & silky truffle mash.
Course 4 – A decadent dessert to finish
Each course will be paired to a different whisky plus an extra bonus whisky served through a bone marrow luge.
