Palate

Beautifully integrated earthy & savory peat blended into a salted vanilla syrup. There’s a meatiness in the mid palate like charcuterie – lonza and bresaola. Huge salty hit on the back palate and a minerality like crushed oyster shells with a faint appearance of lime cordial. The finish is long with a lot of salinity shining through on the mid to back palate.

The inaugural release with independent bottler Cut Your Wolf Loose in the UK is also the first global release of Highwayman with 100 bottles for the UK and 100 bottles for Australia released simultaneously.
This release sees HWM signature peated spirit aged in two x 100L American oak char #3 first fill Dark Horse bourbon whiskey casks for 3 years and 2 months giving the whisky a maturity far beyond its years spent in oak. A sign of new things to come and a bright future for the brand to explore globally.
