Leeroy Highwayman x Caribou This batch is a very special release made in honor of one of Dan’s closest and oldest friends, Leeroy Petersen. Earlier this year Leeroy made the trip to Byron to see Dan so they could blend some whisky to make a special batch for his bar, Caribou, in Canberra. This is something they had been planning together for years. Speaking the night before to confirm the time would be the last time they would ever speak as Leeroy passed in his sleep that night. Dan really wanted to honor his friend by still making the whisky and with Leeroy’s wife’s blessing we now have something very special to remember the great man. This beautifully crafted, unique whisky sees Highwayman’s peated spirit aged in Rye whiskey barrels that were also used to mature maple syrup giving the whisky an incredible spiciness balanced with sweetness from the maple and undertones of earthy peat smoke giving the whisky another complex layer. Bottled unfiltered and at a cask strength of 55% this batch yielded 150 bottles and launches on Christmas Day – Leeroy’s birthday, a grand day to raise a glass and remember the legend.
