Mexican PX sherry, Black Snake reposado (aged Australian mezcal)

Nose

Burnt caramels drizzled over char grilled jalapeños. Scorched almonds spiced with cloves and cinnamon with hints of candied ginger. Stewed fleshy peaches and nectarines cooked down in a spiced dark syrup.

Palate

Sweetness hits up front in the form of dark agave syrup followed by a roast almond note. Then comes the salty savouriness and earthy but very well integrated and subdue peatiness. Stewed stone fruits lingering with soft sweet spices finishing out with hints of pecan pie. Very long finish, flashing between sweet and savory.

Its name hails from the old blues song by John Lee Hooker made famous by the Doors cover version in the 60’s. This is, without a doubt, the most umami flavour you’ll ever get from a whisky due to its incredibly abstract and obscure maturation regime. This whisky sees Highwayman’s peated spirit aged in a 125L Mexican PX sherry cask before being finished in a Black Snake reposado (aged Australian mezcal) barrel giving it a superb savory sweetness unlike anything you’ve ever tasted!
Bottled unfiltered at a cask strength of 55% this batch yielded 150 bottles.
