Production, ageing notes & comments

27 August, 2026

E.S.P stands for Exceptional sherried perfection and it’s an outstanding single cask that was hand selected by Dan for its brilliance. It has spent its whole life aging in a single Pedro Ximinez sherry cask and was the pick of half a dozen casks of the same type and age.

It’s the only one to be bottled as a single cask without a second maturation or finishing due to its exceptional quality. Loaded with sweet caramels and dark berry fruits as you’d expect but also giving a beautiful saw dust like oakiness without being too cask dominating.

Superb balance leaving you wanting more after every sip. Bottled at a cask strength of 55% and yielding 130 bottles, it won’t last long….

Dan Woolley.
