Translated from the French – ‘my dear smoke’ this is a beautifully peated single malt double matured in refill casks. The medium peated spirit shines through with a salty, savory, minerality that Highwayman peated whiskies are known for. It’s first aged in a 2nd fill 100L PX sherry cask before being finished in a 100L French oak 2nd fill honey cask that Dan seasoned himself in Byron Bay using local honey. Because both casks are 2nd fill the whisky itself has a superb balance of peat, PX and subtle sweetness from the honey cask. A truly wonderful and unique release from the Highwayman stable.
