This wonderful and very much anticipated sequel to last years Honey barrel matured Highwayman single malt whisky, Mullumbimbee the sequel, sees a peated Highwayman spirited aged in 100L French oak Apera cask for 3 years before being finished for 6 weeks in a 100L French oak ex Highwayman whisky cask that Dan seasoned with honey for around 7 months.
This last honey barrel maturation has really rounded out the peat and given the whisky a wonderful overall balance without being too sweet. Unfiltered and bottled at a cask strength of 55% it’s sure to be a classic among Highwayman fans for years to come.
