From Cove to Bay
This incredibly complex whisky has a multi layered back story to match it. Aged in 4 x 50 litre French oak ex tawny refill casks that were sourced from a very well known Tasmanian distillery before being reasoned with Seppeltsfield tawny for over a year in Byron bays tropical climate. They were then filled, whilst still wet, with Highwayman peated signature spirit and left to age for a couple of weeks shy of 3 years giving this whisky a huge amount of bursting flavour! Bottled at a cask strength of 55%, unfiltered and as pure as whisky gets, this batch yielded 270 bottles.
