The third annual release in conjunction with the biggest whisky festival in Australia, Whisky Abbey, sees Highwayman unpeated spirit aged wet re-seasoned second fill PX casks before being tipped and married together. This thick, dark and syrupy concoction is then given a second finishing maturation in a first fill 125 litre Oloroso cask balancing the intense, sweet fruity flavors with a slightly dry, nutty, salty and savory element. It’s then bottled unfiltered and at a cask strength of 55%. A superb multi layered dram of incredible depth and complexity.
